3 cups of frozen hash browns
3⁄4 cup of shredded monterey jack cheese
1 cup of cooked ham, cubed
1⁄4 cup of green onion, diced small
4 well beaten eggs
1 (12 ounce) can of evaporated milk
1⁄4 teaspoon of black pepper
1⁄2 teaspoon of salt

Grease a two-quart rectangular baking dish.

Arrange
the potatoes evenly on bottom of the baking dish. Sprinkle with layers
of cheese, ham and onions. Mix together the eggs and seasonings and pour the
mixture over
the potato, ham and cheese layers. Refrigerate overnight.

Next morning, bake the dish at 350 degrees for 40 to 50 minutes or until set.
Remove it from the oven when done, and allow it to rest for five minutes
before serving.
