A classy breakfast easily made at home
1 English muffin
2 slices of Canadian bacon
2 fresh jumbo eggs
Hollandaise sauce
(from the Café)
Orange juice & coffee
Toast and butter an English muffin and place each half on a plate. Lightly
brown the Canadian bacon 3 minutes per side, and
poach 2 eggs. As the
bacon and eggs cook, prepare the
Hollandaise sauce.

Place a slice of Canadian bacon on each English muffin half. Place a
poached egg on each bacon slice. Top each egg with Hollandaise sauce.

Serve immediately with juice and coffee. Serves 2 persons.
