The Café serves both sausage links or patties. We prefer Jimmy
Dean's Original brand or similar made into patties. Start cooking
the sausage long before frying the eggs so it can cook slowly.
Heat some olive oil in an iron skillet, and heat the skillet on 3 or 4.
Put the links or patties in the hot oil and reduce the heat to
between 2 and 3 to cook the meat very slowly. Turn the meat
often and watch the juice for signs that it's done.
