1/2 cup of diced onion
1/2 cup of butter
1/2 cup of all purpose flour
2 cups of milk
2 cups of shredded cheddar cheese
1/4 teaspoon of ground black pepper
8-10 hard-cooked eggs, peeled and sliced
1 cup of diced ham
2 cups of crushed potato chips
Small jar of chopped pimentos (optional)
Additional shredded cheese for topping
Preheat oven to 350 degrees. Melt butter in a large saucepan. Add onion and
cook until tender, about 5 minutes.

Add flour to make a paste, and then add milk gradually in small amounts, stirring
well until smooth. Stir constantly and heat on medium high until thick. Remove
from heat and stir in cheese and pepper. Cover and set aside.

Spray a 9 x 13 casserole dish with cooking spray, and add the ingredients in
layers as follows.










Top with additional shredded cheese and pimentos if desired. Bake for 30 to 40
minutes until top begins to brown and casserole is bubbly
