A Fatted Café original recipe
1 cup of dry rice, cooked
1 medium onion, diced
1 pound of bratwurst links
1 28-oz. can of diced tomatoes
1 8-oz package of Pepper Jack cheese, shredded
1 cup or so of chicken broth
Salt & pepper to taste
Put 1 cup of rice in a microwave dish with 2 cups of water. Cover and microwave
on high for 15 minutes.

While the rice is cooking, slice the bratwurst into bite-sized pieces (approx.
3/8-inch) and fry slowly in a large skillet in enough chicken broth to keep it from
drying out. Dice the onion and add it to the skillet.

After the sausage and onion are cooked tender, add the diced tomatoes. When the
mixture is hot, add 4 ounces of the shredded cheese and season with salt and
pepper.

When the rice is done (when the water is cooked away), add it to the skillet and
toss it to mix everything together. Serve with the remaining cheese sprinkled over
the top.
