|We made it simple, and this goes well
with a steak on the side for Surf 'n Turf!
1 pound of medium shrimp,
steamed, shelled and deveined
1/4 pound of thin spaghetti
1/2 stick of butter
3 teaspoons of minced garlic
1 large tomato, diced small
1/2 medium onion, diced and boiled to tenderize
Cut leaf spinach, half a frozen package or less
1 tablespoon of lemon juice
1 tablespoon of chopped parsley
1/2 teaspoon of crushed red pepper
Salt & pepper to taste
Put the spaghetti on to boil and drain when done. Steam the shrimp until bright
pink, about 10 minutes, and then peel them and set aside.
Melt 1/2 stick of butter in a large skillet and add the minced garlic. After that has
heated through on medium heat, add the tomato, spinach and other ingredients
and simmer for a few minutes more. Then add the spaghetti and shrimp to the
skillet and toss until everything is heated through and coated. Serve right away
with some grated Parmesan to sprinkle on top.
