A great dish has a tasty finish
Melt the butter in the microwave. Place the other ingredients in the top
of a stainless steel double boiler and start the water boiling on high.

Stir the mixture rapidly, add the melted butter, and keep stirring until it
thickens smoothly. If it curdles, stir in 1 or 2 tablespoons of boiling hot
water.

Serve immediately. Makes about 1 cup. Use as a topping for vegetables,
poultry, fish or eggs.
4 egg yolks
1/2 cup of butter
3 tablespoons of lemon juice
A dash of salt
A dash of white pepper
