3 cups of sliced carrots,
cooked until just tender
1 large onion, sliced and sautéed in butter
1 cup of grated cheddar cheese
Salt and pepper to taste

Baked Carrots
at The Fatted Café
Preheat the oven at 350 degrees. Slice the carrots and cook in boiling
water until just tender. Sauté the onion in butter. When the onions are
tender, add the carrots and stir together. In a 1 1/2-quart casserole dish,
pour a third of the carrot mixture in the bottom. On top of that sprinkle a
third of the grated cheese. On that pour another third of the carrots. Then
another third of the cheddar. On that the remaining carrots and cheese.

Bake covered for 20 minutes, then uncover and bake 10 minutes more.
